Veggie Lasagna Rolls

If you’re like me you love pasta…and you also hate pasta. You love all those tasty and delicious pasta dishes, but you hate all the calories they can rack up.

These lasagna rolls are the perfect thing to cure that pasta hankering and keep your calories down!

Honesty I can’t think of anything better!

Ingredients needed for this tasty dish are:

  • Lasagna Noodles…I used 9
  • Frozen Chopped Spinach…One Small Bag:Thawed and Drained
  • Skim Ricotta Cheese…15oz
  • Parmesan Cheese…1/2 cup grated
  • 1 egg
  • Mushrooms…1 cup chopped
  • Green Onion…1 cup chopped
  • Mozzarella Cheese…3oz bag
  • Your favorite Spaghitti Sauce…32 oz

First things first…time to cook the lasagna noodles!

Once my lasagna noodles are cooked I laid them out on wax paper to dry.

Next in a mixing bowl I combined the:

spinach, ricotta cheese, parmesan cheese and the egg.

Also I added a little bit salt and pepper.

I set that to the side and cooked my mushrooms and chopped my green onion.

This was seriously my first time cooking with mushrooms…I know. I know, how have I lived this long with out this ingredient?!

I loved adding green onion to this dish! It adds just the right amount of crunch!

I them added the mushrooms and green onion and mixed it all together!!

If it wasn’t for the raw egg in the mix I could of just ate it straight from the bowl!

Once mixed together I scooped 1/3 cup of filling onto each noodle.

Now for the fun part! Lets start rolling em’ up!

This is a great part for the little hands in your family to get involved!

They will love rolling these up!

I also added 1/3 cut of sauce to the bottom of my pan before putting the rolls in.

I just love ingredients that are real and I can understand.

This is a bit pricy…My husband does not need to know how much…kind of pricy,

but you only live once…so buy the pasta sauce!

Pretty sure that should go on bumper sticker! ha

After I had all my rolls in my pan I put my sauce on top and topped with mozzarella cheese!

I baked these babies at 350 for 40 minutes and them broiled it the cheese got all bubbly and delicious looking!

Voila! Dinner is served!

I just threw together a quick salad to have on the side….and by
“threw together”I mean I opened the bag and put it on the plate!

Hey! It was still and awesome salad!

This makes plenty for my husband and myself and still some for him to take to work for the next couple of days!
